Do both work offline?
Yes. Both keep selling through an internet outage and sync automatically when the connection returns.
Which one is easier to host?
Both run on a standard PHP and MySQL or MariaDB server. Resto needs PHP 8.3 or newer and Stocky POS PHP 8.2 or newer. See the server requirements.
